Whoopie, or whoopie pies, are small "sandwich pies". They consist of two cookies with a delicious cream filling in between.

Ingredients
Butter cream

230 g Butter, unsalted

200 g Powdered sugar

pieces Juice, lemon

600 g chocolate, dark

150 g Butter, unsalted

140 g Sugar, white

1 piece Egg, fresh

1 piece Egg, egg yolk, fresh

280 g Wheat flour, white, multi-purpose

5 g Baking powder

125 g Milk, whole milk

pieces Vanilla, extract, imitation

Steps

In a bowl, carefully mix the baking powder and flour. Cream the softened butter and sugar together. First, mix in the whole egg, then the egg yolk. Next, gradually add the dry ingredient mixture to the egg-butter mixture in two or three batches. Once you have a smooth and thick batter, mix in the milk combined with vanilla extract.

Transfer the batter into a piping bag and pipe small mounds onto a baking sheet lined with parchment paper. Bake the cookies in a preheated oven at 180°C for 10 minutes.

While the baked cookies cool, prepare the cream. Chop the white chocolate into pieces and melt it over a double boiler. Cream the butter and sugar together. First, mix in the lemon juice, then the cooled melted chocolate.

Fill a piping bag with the cream and pipe it onto half of the cookies. Cover with the other half of the cookies, then gently press each cookie sandwich together with your fingers just enough to spread the cream to the edges.

Finely grate the dark chocolate. Roll the edges of the cookies in the grated chocolate. Serve the prepared whoopie pies on a plate or platter and enjoy.
