Hasselback Potatoes with Sour Cream and Bacon
Hasselback potatoes are a very popular side dish in Sweden, served even in the most prestigious hotels and restaurants. The dish itself is essentially nothing special, as it is just baked potatoes. However, it looks absolutely stunning because the potatoes are sliced thinly before baking, with the slices still connected on one side - and this allows the potatoes to open up like a fan during baking.

8 pieces Potatoes, white

2.5 spoons Oil, olive

2 slices Meat, pork, smoked bacon

Preheat the oven to 200 degrees Celsius. Line a low baking dish with parchment paper. Thoroughly wash the potatoes under running water. Make several deep cuts into each potato with a sharp knife, being careful to keep the potato intact. Place the sliced potatoes on the prepared baking dish (the side where the potato is still connected should be facing down). Drizzle them with olive oil, season with salt and pepper, and bake in the preheated oven for 40 to 45 minutes or until they soften and turn golden brown.

Cut the bacon into small pieces and fry them until crispy in a little oil. Clean, wash, and finely chop the green part of the spring onion.

Once the potatoes are baked, remove them from the oven. Add a spoonful of sour cream to each potato, then sprinkle with the fried bacon and chopped spring onion. Serve the dish immediately.

Advice
If the potatoes have a tough skin, peel them before baking. You can take the potatoes out of the oven 10-15 minutes before the end of baking and insert pieces of cheese between the slices. It is not necessary to insert cheese between all the slices; adding 4-5 pieces will be enough.
