Hazelnut and Almond Brittle
Brittle is made from a mixture of nuts and caramelized sugar. If we crumble it into small pieces, it can be sprinkled over ice cream or cake.

170 g Nuts, hazelnuts

440 g Sugar, white

Preheat the oven to 180 degrees Celsius. Prepare two baking sheets. Spread hazelnuts on one and almonds on the other. Make sure the nuts are arranged in a single layer on each sheet. Place both sheets in the preheated oven for 10 minutes. Halfway through baking, shake them well so that the nuts roast evenly.

Transfer the roasted hazelnuts to one half of a clean kitchen towel. Cover them with the other half of the towel and gently roll them with your hands until all the brown skins are removed.

Place a thick-bottomed saucepan on the stove and heat the sugar over moderate heat for 10 to 15 minutes until it melts and caramelizes. Stir the sugar while heating to prevent it from burning. Once the sugar turns golden brown, add the roasted nuts and butter. Mix well, then transfer the mixture onto parchment paper and roll it out to an even thickness using a rolling pin. Let the brittle cool and harden.

Once cooled, break the brittle into smaller pieces and serve with ice cream or a warm drink.

Advice
Roasted nuts add a special flavor to the brittle. If desired, the roasting process can be skipped. If the sugar caramelizes too much, it will become bitter. Therefore, heat it only until it turns a golden brown color. Brittle can be stored in an airtight container at room temperature for several weeks.
