Hazelnut Butter Cookies
We recommend using roasted hazelnuts for preparing the cookies, as the kitchen will already smell amazing during baking.

115 g Butter, unsalted

70 g Sugar, white

50 g Nuts, hazelnuts

1 teaspoon Vanilla, extract, imitation

120 g Wheat flour, white, multi-purpose

0.5 teaspoons Baking powder

Steps

Finely grind the roasted hazelnuts in a food processor. Sift the flour into a bowl and mix it with baking powder and salt.

In another bowl, use an electric mixer to mix the diced butter and sugar. Mix on high speed for 4 to 5 minutes until you get a slightly creamy mixture. With a spatula or wooden spoon, mix the ground hazelnuts and vanilla flavoring into the butter mixture. Then mix in the flour. Be careful not to mix the ingredients for too long - just enough to form a crumbly mixture. Use your hands to bring everything together into a uniform dough, which you then transfer from the bowl to a clean work surface. Lightly dust the work surface with flour if needed. Shape the dough into a log with your hands, wrap it in plastic wrap, and place it in the refrigerator for at least 30 minutes.

Preheat the oven to 160 degrees Celsius. Line a low baking sheet with parchment paper. Once the dough is completely cooled and firm, take the log out of the refrigerator and remove the plastic wrap. Slice the log into 0.5 cm thick rounds and place them on the prepared baking sheet. Put the baking sheet with the cookies into the preheated oven for 15 to 20 minutes.

Immediately transfer the baked cookies from the baking sheet to a wire rack and let them cool completely. Serve the cookies with a cup of tea or coffee.
