Hazelnut Cake with Plums
The cake can be served warm or cold. For the cold version, offer a cup of warm beverage, and for the warm version, serve it with a scoop of good ice cream or frozen cream.

Steps

Preheat the oven to 180 degrees Celsius. Grease a round cake pan (22 cm in diameter) well with butter. Line the bottom of the pan with baking paper. Wash the plums, cut them in half, and remove the pits. Save some halves and chop the rest into small pieces.

Sift the flour into a bowl and mix it with baking powder and ground hazelnuts. In another bowl, use an electric mixer to blend the butter and sugar. Mix on high speed for about 4 to 5 minutes until you get a slightly creamy mixture. Gradually (one by one) add the eggs (mixing each for about half a minute). Then add half of the flour, baking powder, and hazelnut mixture and incorporate it into the egg mixture using a spatula or a hand whisk. Repeat the process with the remaining half. Finally, fold in the chopped plums.

Pour half of the prepared batter into the prepared pan. Arrange the saved plum halves over the batter and cover them with the remaining batter. Smooth the top with the back of a spoon and sprinkle with coarsely chopped hazelnuts. Place the pan in the preheated oven for 40 to 45 minutes. The cake is done when the surface turns golden brown, and a toothpick inserted into the cake comes out clean.

Remove the baked cake from the oven and let it cool in the pan for 10 minutes. Then remove it from the pan and let it cool on a wire rack. Before serving, dust it with powdered sugar.

Advice
The butter is easiest to soften by taking it out of the refrigerator at least one hour before preparation and letting it sit at room temperature. While the cake is baking in the oven, make sure the hazelnuts do not burn. If necessary, cover the cake with a piece of aluminum foil towards the end of baking.
