In a bowl, sift the flour and powdered sugar, then mix them with ground hazelnuts, cinnamon, and vanilla sugar. Add the cubed butter to the mixture and rub it into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add the egg yolk and quickly knead everything together into a uniform dough. Shape it into a ball, wrap it in plastic wrap, and refrigerate for 60 minutes.

Preheat the oven to 180 degrees Celsius. Thoroughly clean the work surface and lightly flour it. Roll the dough into a long log and cut it into equal pieces with the blunt side of a knife. Shape the pieces into crescents. Place them on a baking sheet lined with parchment paper and bake in the preheated oven for about 12 minutes, until they turn a delicate golden brown.
