Hazelnut Cookies with Chocolate Cream
These cookies, which contain no flour, slightly resemble the famous macarons, but their preparation is much simpler, and the result is festively delicious. Hazelnuts and chocolate go hand in hand, with a touch of lemon and orange zest adding the finishing touch. And a hint, the cookies are even better the day after baking.

100 g chocolate, dark

100 g Sweet cream

25 g Butter, unsalted

250 g Nuts, hazelnuts

200 g Powdered sugar

20 g Cocoa, powdered, unsweetened

1 bag Sugar, white

Steps

Preheat the oven to 175 degrees Celsius. Finely grind the hazelnuts and powdered sugar in a food processor and transfer the mixture to a bowl. Add cocoa, vanilla sugar, grated lemon zest, and mix well.

Beat the egg and egg white, add them to the mixture, and quickly knead the dough. Leave the dough uncovered to rest for 45 minutes to allow it to dry slightly.

Use a spoon to scoop the dough and form balls about two centimeters in diameter. Place them on a baking sheet lined with parchment paper. Gently press each ball with the bottom of a glass. To prevent sticking, moisten the bottom of the glass with water several times.

Bake the cookies in the preheated oven for 10 minutes, then let them cool before carefully removing the parchment paper.

Break or chop the chocolate into pieces. Heat the cream almost to boiling and pour it over the chocolate. Add the butter, mix well, and let it cool.

You can put the chocolate cream in a piping bag for easier distribution, or simply use a small spoon to spread it on half of the cookies, then cover with the other halves. Gently press the halves together so the cream spreads nicely to the edges. Before serving, dust the prepared cookies with powdered sugar if desired.
