Hazelnut Pie
Hazelnut pie is just as delicious as potica, but it requires much less effort and is almost impossible to mess up!

Ingredients

350 g Flour, Wheat, bread flour

1.5 teaspoons Baking powder

150 g Powdered sugar

0.5 teaspoons Vanilla, extract, natural

1 spoon Lemon zest, fresh

200 g Butter, unsalted

2 piece Egg, egg yolk, fresh

1 dl Sour cream

5 pieces Egg, egg white, fresh

100 g Sugar, white

3 pieces Egg, egg yolk, fresh

200 g Nuts, hazelnuts

1 spoon Alcohol, Rum

Steps

Sift the flour into a bowl, then add baking powder, sugar, vanilla, and lemon zest. Add the butter, cut into pieces, and rub it into the flour with your fingertips until you get a crumbly mixture.

Crack the eggs and carefully separate the whites from the yolks into two bowls. Set aside the egg whites for the filling. Make a well in the center of the flour mixture, add 2 egg yolks and cream, and knead the dough. Shape it into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.

Meanwhile, prepare the filling: beat 5 egg whites into stiff peaks. Add sugar and 3 egg yolks, and continue beating until the mixture increases in volume. Finally, gently and slowly fold in the rum and hazelnuts.

Grease a round pie mold. Preheat the oven to 180°C (350°F). Divide the rested dough into two parts. Roll out each part on a floured surface to the size of the mold. Place one piece of dough into the mold and press it with your fingers along the edges so it rises about 0.5 cm high. Bake the crust in the preheated oven for 10 minutes to partially bake it.

Remove the mold from the oven, spread the filling over the crust, and cover it with the second piece of dough. Bake the pie for another 25 minutes, then remove it from the oven and let it cool. Once cooled, sprinkle the pie with sugar, cut it into slices, serve on plates, and enjoy.
