175 ml Sweet cream

200 g chocolate, dark

50 g Nuts, hazelnuts

1 teaspoon Vanilla, extract, imitation

50 g Cocoa, powdered, sweetened

Preheat the oven to 200 degrees Celsius. Spread the hazelnuts in a single layer on a low baking tray. Place the tray with the hazelnuts in the preheated oven for 10 minutes, until the hazelnuts turn golden brown. Shake the tray well halfway through baking to ensure even roasting.

Transfer the roasted hazelnuts to one half of a clean kitchen towel. Cover them with the other half of the towel and gently roll them with your hands until all the brown skins are removed. Coarsely chop the peeled hazelnuts.

Break or cut the chocolate into smaller pieces and place them in a bowl. Pour the sweet cream into a saucepan and slowly heat it over medium heat. Just before the cream boils, remove the saucepan from the heat and pour the cream over the chocolate. Wait for one minute without stirring, then gently mix with a whisk until you get a smooth and uniform chocolate mixture. Stir in the vanilla extract and chopped hazelnuts. It's important to mix the ingredients without whipping to avoid incorporating air into the cream.

Pour the chocolate-hazelnut mixture into a small baking dish and place it in the refrigerator for 2 to 4 hours, until the mixture is completely cooled and firm.

Remove the firm mixture from the refrigerator. Use a spoon or an ice cream scoop to portion the mixture and place it on prepared parchment paper. Sprinkle cocoa powder onto a shallow plate. Roll each chocolate portion in the cocoa powder and shape it into a ball with your hands. To prevent the balls from sticking to your hands, dust them with cocoa powder.

Place the shaped truffles in the refrigerator for a few minutes, then arrange them on a plate and serve.

Advice
Instead of vanilla extract, you can use hazelnut liqueur, rum, or brandy. Vanilla extract can also be made at home.
