60 ml Milk, skimmed

60 ml Butter, unsalted

120 ml Syrup, maple

2 piece Apple, fresh

1 handful Nuts, almonds, blanched

1 handful Oat bran, raw
Steps

Preheat the oven to 180 degrees Celsius. Lightly grease the muffin tin with oil or butter. Instead of greasing, you can also insert paper liners.

In a clean bowl, mix the dry ingredients: whole wheat flour, baking powder, baking soda, salt, and spices (cinnamon, ginger, nutmeg).

In another bowl, mix the wet ingredients: Greek yogurt, eggs, milk, melted coconut oil or butter, maple syrup, and vanilla extract. Mix the ingredients well with a hand whisk to form a uniform mixture.

Add the wet mixture to the dry ingredients, then quickly mix everything together with a spatula or spoon to form a uniform batter.

Wash the apples and cut them into chunks, then fold them into the prepared batter.

Spoon the prepared batter into the greased muffin tin. Fill each cavity to three-quarters full, as the batter will rise slightly during baking. Sprinkle some almond flakes and oats on top.

Bake the muffins in the preheated oven for 22 to 25 minutes. They are done when a toothpick inserted into the center comes out clean.

Let the baked muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
