400 g Pasta, spaghetti, whole grain

0.5 piece Pumpkin, raw

1 piece Onion, raw

1 pod Garlic, fresh

2 spoons Oil, olive

1 handful Pine nuts
Pesto

0.25 cups Seeds, pumpkin

2 spoons Juice, lemon

50 g Cheese, Parmesan, hard

Steps

Pesto: Add all the ingredients for the pesto into a multipurpose blender and blend until smooth. Season the pesto with salt to taste.

Clean the pumpkin, peel if necessary, and cut into small pieces. Roast in the oven preheated to 200 degrees Celsius for 20 to 25 minutes. In a pot, bring a large amount of salted water to a boil and cook the pasta.

Peel the garlic and onion, finely chop, and sauté in olive oil until the onion becomes translucent. Add the roasted pumpkin, pesto, and drained pasta. Mix well and season with pepper and/or salt if desired.

Serve the prepared pasta on plates, sprinkle with toasted pine nuts, and enjoy.
