Healthy Spiced Apple Cake
A cake without eggs and dairy products will fill your kitchen with the intoxicating aroma of apples and spices while baking. Thanks to the addition of apple sauce and grated apple, the cake is very juicy, yet it pairs excellently with a cup of warm beverage.

Steps

Preheat the oven to 180 degrees Celsius. Grease a small square baking pan (20 x 20 cm) with butter or line it with baking paper. In a small bowl, mix ground flaxseeds and water. Let it sit for a few minutes to form a gel-like mixture.

In a larger bowl, mix the flour, sugar, baking powder, baking soda, and spices.

In another bowl, mix the apple sauce, soaked flaxseeds, oil, and vanilla extract. Pour the wet mixture into the bowl with the dry ingredients and quickly mix everything together with a whisk or spatula to form a uniform mixture. Stir in the grated apple (you can omit the grated apple if desired). If the batter seems too runny, add a bit more flour.

Pour the apple mixture into the prepared baking pan and spread it evenly with a spatula, smoothing the top. Bake the cake in the preheated oven for 30 to 35 minutes. The cake is done when a toothpick inserted into the center comes out clean.

Let the baked cake rest for 10 minutes, then brush the top with a mixture of water and maple syrup. Allow the cake to cool, then dust it with powdered sugar if desired, cut into pieces, and serve.
