Heart-Shaped Doughnuts
How can we solve the dilemma when Valentines Day and Carnival are almost on the same day? With adorable heart-shaped doughnuts, of course! We can offer them without any toppings, or for even more enjoyment, fill them with jam or cream and drizzle them with sugar or chocolate glaze.

21 g Yeast, dry

250 ml Milk, whole milk

0.5 kg Wheat flour, white, multi-purpose

Steps

Pour a little warm milk into a bowl. Crumble the yeast into it with your fingers and add one teaspoon of sugar and one teaspoon of flour. Mix into a smooth mixture and let the yeast rise in a warm place for 10 to 15 minutes.

In a bowl, mix the egg yolks, rum, sugar, vanilla sugar, lemon zest, and melted butter with a hand whisk. In a large bowl, sift the flour and make a well in the center. Pour the egg yolk mixture and the remaining warm milk into the well, and sprinkle salt around the flour. Quickly mix the ingredients in the bowl with a whisk to form a rough dough. Then start kneading the dough with the whisk and add the risen yeast a little later. Knead for about 10 minutes or until bubbles start to form in the dough. Properly kneaded dough is soft and pliable and does not stick to hands or the bowl. Cover the bowl with a clean cloth and let it rest in a warm place until the dough doubles in volume (about one hour).

Place the risen dough on a floured surface, knead it well, and roll it out to 1 to 1.5 cm thick. Use a cutter to cut out heart shapes of any size from the rolled dough and place them on a floured cloth. Make sure there is at least a two-finger gap between the hearts, as they will rise a bit during proofing. Let them proof in a warm place for 10 to 15 minutes. During proofing, flip them once so they rise on the other side as well.

Place a pot on the stove and heat a larger amount of oil. The oil is hot enough when small bubbles appear around the handle of the whisk dipped into the oil. Carefully place the doughnuts with the proofed side down into the hot oil. Cover the pot and fry the doughnuts on medium heat until they turn golden brown on the bottom. Uncover the pot, flip the doughnuts, and fry until golden brown on the other side.

Line a plate with paper towels. Remove the fried doughnuts from the oil with a slotted spoon and place them on the towels. Let the excess oil drain. Repeat the process until all the proofed doughnuts are fried.

Serve the cooled doughnuts on a plate or platter, dust with powdered sugar, and serve.
