Steps

Prepare the egg pasta dough from the listed ingredients, shape it into a loaf, cover it with a damp cloth, and let it rest for half an hour. Wash the basil, dry it, and finely chop it. In a bowl, place the ricotta and butter. Mash them well with a fork. Add grated Parmesan, chopped basil, egg, salt, and a pinch of nutmeg. Mix the mixture well and store it in the refrigerator until ready to use.

Roll out the prepared pasta dough on a floured surface to a thickness of two millimeters and cut it into strips, ten centimeters wide. On the lower half of each strip, place dollops of the ricotta filling at five-centimeter intervals. Fold the upper half of the strip over to cover the filling, and press the edges with your fingers to seal the filling inside, ensuring it doesn't escape during cooking.

Use a serrated heart-shaped cutter to cut between the fillings, creating a heartfelt pattern and evenly sized hearts. Cook the prepared ravioli and serve with your chosen sauce.

Advice
