Steps

Sift the flour into a large bowl and add salt. Cut the butter into smaller pieces and rub them into the flour. Then, crack an egg into the bowl and add cold water. Mix everything well and quickly knead into a smooth, crumbly dough. Shape the dough into a ball, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes.

Preheat the oven to 200°C and grease a round pie dish. Take the dough out of the refrigerator and roll it out on a lightly floured surface to a thickness of 5 mm. Line the pie dish with the rolled-out dough, pressing it well against the bottom and sides of the dish with your fingers. Trim off any excess dough. Prick the dough with a fork in several places and cover the bottom with baking paper. Sprinkle beans over the bottom to cover it completely. Place the dish with the dough in the preheated oven and bake for 10 minutes.

Wash the parsley and chives thoroughly, dry them, and chop finely. Crack the eggs into a bowl and whisk them well with milk, salt, pepper, sour cream, and nutmeg using a hand whisk. Then, mix in the chives and parsley. Take the pie dish out of the oven and remove the baking paper with the beans. Pour the prepared egg and herb mixture over the dough. Place the dish back in the oven and bake for an additional 15 minutes.

Take the baked pie out of the dish and let it cool slightly. Cut the pie into slices, serve on plates, and enjoy.
