Herb-Potato Gnocchi with Mushrooms

500 g Potatoes, white

Wash the potatoes, place them in a large pot, and cover with water. There should be enough water to cover the potatoes by two fingers. Add salt and place the pot on the stove. Wait for the water to boil, then reduce the heat, cover the pot, and cook the potatoes for another 25 minutes. Drain the cooked potatoes and let them cool slightly in the colander. Peel the still-warm potatoes and mash them (pass them through a ricer).

In a large bowl, combine the mashed potatoes, egg yolk, cubed butter, grated Parmesan, salt, and chopped herbs. Mix with a spoon until the ingredients are well combined. Then, transfer the mixture to a floured work surface and knead into a smooth dough. Knead for 10 minutes, gradually adding flour.

Divide the dough into 4 parts. Roll each part on a lightly floured work surface into a 2 cm thick rope, then cut into 2.5 cm long pieces.

Place a large pot of salted water on the stove and wait for it to boil. Add the gnocchi to the boiling water and when they float to the surface, remove them with a slotted spoon. Keep the cooked gnocchi warm.

Peel and finely chop the garlic and onion. Clean the mushrooms and slice them. Heat olive oil in a wide pan, add the onion. Sauté over medium heat for 5 minutes until the onion is golden and softened. Add the mushrooms and garlic and sauté for another 5 minutes until the excess liquid released by the mushrooms evaporates.

Add the gnocchi to the pan and sauté for 5 minutes, stirring occasionally, until they turn golden brown.

Serve the gnocchi with mushrooms on plates, sprinkle with Parmesan, and serve.
