Herb-Stuffed Pork Chops

Steps

Preheat the oven to 180 degrees Celsius. Rinse the meat under running water and dry it thoroughly with paper towels. Using a sharp knife, make a deep pocket in the center of both chops, which we will stuff with herbs.

Season the chops well with salt (also salt the inside of the pocket). In a bowl, mix the herbs, garlic, lemon zest, chili flakes, pepper, cumin seeds, and olive oil. Fill the pockets with the prepared mixture. Use the remaining mixture to rub the outside of the meat.

Heat olive oil in a large ovenproof pan and sear the chops on both sides (about 5 minutes per side). Then transfer the pan to the preheated oven and bake the chops for another 5 to 10 minutes.

Let the baked chops rest for 10 minutes before serving. Garnish with rosemary and serve with lemon wedges.
