Ingredients

500 ml Vinegar, apple

2 pod Garlic, fresh

2 twigs Rosemary, fresh

2 grains Spices, pepper, black

Wash fresh rosemary under running water and dry it with a paper towel. Thoroughly wash and sterilize a bottle that can withstand high temperatures by rinsing it with boiling water or placing it in a warm oven for a few minutes.

Pluck a small handful of leaves from the sprig and crush them in a mortar. Peel the garlic and also crush it in the mortar, then transfer both into the sterilized bottle. Add two peppercorns. Pour the vinegar into a cup and bring it to a boil. Immediately after boiling, pour the vinegar into the bottle with the herbs and seal it tightly. The bottle with rosemary should not be opened for at least two weeks, but it is good to shake the bottle several times during this period.

After this time, pour the vinegar into another sterilized bottle. Use a clean cheesecloth when pouring to prevent pieces of garlic, peppercorns, and rosemary from passing into the fresh bottle. For decoration, insert a sprig of fresh rosemary into the bottle, then seal it tightly and store it in a dark and cool place.

Advice
For herbal vinegars, white and red wine vinegar as well as apple cider vinegar are suitable. The best herbs for vinegar are: mint, rosemary, basil, dill, and thyme.
