Holiday Dessert in a Glass
A delightful holiday dessert that combines the flavors of chocolate, mascarpone, and forest fruits. No oven is required for preparation, but you’ll need some time as the chocolate cream needs to cool thoroughly before serving. This dessert is perfect for pre-New Year’s parties or as a finale to Christmas or New Year’s Eve dinners.

Steps

First, prepare the chocolate cream. Pour milk into a saucepan and add vanilla paste. Place it on the stove and let the milk heat slowly over low heat.

Meanwhile, in a smaller heatproof bowl, add egg yolks and sugar. Mix well with a hand whisk until smooth, then incorporate the cornstarch.

Slowly pour the hot milk into the egg yolk mixture while stirring. Transfer the mixture back to the saucepan and cook over low heat, stirring constantly, until it thickens into a cream. Remove from heat and add chopped chocolate. Stir well until the chocolate is completely melted and combined with the cream. For a smoother texture, you can use an immersion blender to eliminate any lumps.

Transfer the cream to a clean bowl and cover it with plastic wrap, ensuring it touches the surface. Refrigerate for 2 hours to cool and set.

Quickly cook the forest fruits and sugar over low heat until the sugar dissolves (2 to 3 minutes). Then blend the fruits with an immersion blender and, if desired, strain through a fine sieve to remove seeds.

Simmer the fruit puree a bit longer to thicken slightly (3 to 5 minutes). Remove from heat and let it cool.

Finally, prepare the mascarpone cream. For easier handling, take the mascarpone cheese out of the fridge 30 minutes before preparation to let it reach room temperature. Whip the sweet cream and set it aside.

Mix the mascarpone and powdered sugar until smooth. Add a bit of vanilla paste for flavor. Gently fold the whipped cream into the mascarpone mixture using a hand whisk or an electric mixer on the lowest speed. Stop mixing once a thick and firm cream forms.

Prepare two piping bags fitted with star tips. Fill one bag with mascarpone cream and the other with chocolate cream.

In the glasses where you’ll serve the dessert, start by adding 1-2 tablespoons of fruit puree. Pipe a layer of mascarpone cream over the puree, followed by a layer of chocolate cream. Top with a dollop of mascarpone cream. Decorate the dessert with grated chocolate, and for a finishing touch, you can add a cherry in syrup on top. Serve immediately or store in the fridge until ready to serve.
