Hollandaise Sauce

Ingredients

15 ml Juice, lemon

2 teaspoons Vinegar, apple

3 pieces Egg, egg yolk, fresh

125 g Butter, unsalted

2 pinch Salt, table

1 pinch Spices, pepper, black
Steps

Cut the softened butter into pieces. Place a pot with about half a liter of water on the stove and wait for the water to boil. Pour lemon juice and white wine vinegar into a bowl that fits the pot. Add egg yolks and whisk them until frothy. Mix only enough to double the volume of the yolks.

Place the bowl with the egg yolk mixture over the pot of boiling water and continuously whisk until you get a thick and frothy sauce (be careful not to let the eggs curdle!). Gradually add the pieces of butter while whisking. Remove the bowl from the heat and season the hollandaise sauce with pepper and salt to taste.

Pour the prepared sauce into a serving bowl and serve.

Advice
The water in the pot should be enough so that it does not touch the bottom of the bowl. If we add too much butter, the mixture may collapse or separate. In this case, the sauce can be saved by adding a few tablespoons of cold water, gently stirring to re-emulsify the mixture, and then continuing the process.
