Ingredients
-
300 g Nuts, hazelnuts
-
1 spoon Cocoa, powdered, unsweetened
-
1 teaspoon Powdered sugar
-
1 pinch Salt, table
-
0.5 teaspoons Oil, plant, sunflower
-
50 g chocolate, dark
-
80 g chocolate, dark
Steps
-
Preheat the oven to 180 degrees Celsius. Spread the hazelnuts in a single layer on a baking tray and place it in the preheated oven for 10 minutes. Halfway through baking, shake the tray well to ensure the hazelnuts roast evenly.
-
Let the roasted hazelnuts cool slightly, then transfer them to half of a clean kitchen towel. Cover them with the other half of the towel and gently roll them with your hands to remove most of the brown skins. Allow the roasted hazelnuts to cool completely.
-
Place the cooled hazelnuts in a powerful electric chopper or blender and grind them until you get a smooth hazelnut butter (this will take some time, approximately 10 minutes on high speed). Stop the machine several times during the process and use a spatula to scrape the ground hazelnuts from the sides of the container and add them back to the mixture.
-
Add a pinch of salt, cocoa powder, powdered sugar, and sunflower oil to the hazelnut butter. Mix everything well.
-
Break or chop the chocolate into smaller pieces and place them in a heatproof bowl. Set the bowl over a pot of boiling water, making sure the water does not boil too vigorously and that the bottom of the bowl does not touch the water. Slowly melt the chocolate over the steam.
-
Let the melted chocolate cool slightly, then add it to the bowl with the hazelnut butter. Mix well again to combine the melted chocolate and hazelnut butter into a smooth spread. Adjust the sweetness with additional powdered sugar if needed, then pour the spread into a jar, seal it with a lid, and store it in the refrigerator.

Advice
If you want the spread to be even creamier, mix in about 30 g of liquid sweet cream. The spread will thicken as it cools, so it is recommended to let it sit at room temperature for a few minutes before use to regain its original (more liquid) consistency.
