Ingredients
-
2 piece Egg, fresh
-
120 g Sugar, white
-
1 bag Sugar, white
-
0.5 teaspoons Lemon zest, fresh
-
40 g Butter, unsalted
-
2 spoons Milk, whole milk
-
300 g Flour, Wheat, bread flour
-
1 teaspoon Baking powder
-
pieces Nuts, hazelnuts
-
pieces Cranberries, dried
Steps
-
Beat the eggs until frothy and add the following ingredients in order: granulated sugar, vanilla sugar, lemon zest, butter, milk or water, baking powder, and flour. Once a smooth but very thick dough forms, mix in the chopped nuts and/or cranberries with a spoon or spatula.
-
Preheat the oven to 180°C. Divide the dough into two parts and shape each into a long roll (almost as long as the baking tray) on a lightly floured surface. Place them on a baking tray lined with parchment paper and flatten them with wet hands to about 1 cm thickness.
-
Place the tray in the oven and let the loaves bake in the middle rack for about 25–30 minutes, or until the dough turns golden yellow.
-
Once the loaves are baked, remove the tray from the oven and let the dough cool slightly for a few minutes. Then, slice them diagonally into 1 to 2 cm thick slices, arrange them on the tray, and return them to the heated oven for a few more minutes to let the cookies dry out a bit.
-
Let the cookies cool before serving, and optionally dip them in melted chocolate (white or dark).
