Homemade Goose Soup
To avoid always having just beef or chicken soup, prepare a goose soup. The process is similar, and in the end, its all up to your imagination: what vegetables to add and which spices to choose.

Steps

Wash the goose meat and dry it thoroughly with a paper towel or a clean kitchen cloth.

Place a larger pot on the stove. When it heats up, add olive oil. Place the goose thighs on the heated oil and roast for 5 minutes on one side and then 5 minutes on the other side. Meanwhile, peel and finely chop the onion and garlic. Add both to the meat, along with bay leaves, a tablespoon of tomato paste, stir with a cooking spoon, and pour water over everything. Salt the water and bring it to a boil.

When the soup boils, skim off the foam with a skimmer, lower the temperature, and cook the soup uncovered over low heat for one hour. Occasionally skim off the foam. After one hour, remove the goose meat from the soup, let it cool slightly, and remove the skin and bones. Cut the meat into smaller pieces or tear it by hand. Return the meat to the soup.

Wash the parsley and chop it finely. After one hour of cooking, add it to the soup, along with homemade noodles, and cook for another 10 minutes. Remove the soup from the heat and serve in bowls with a slice of homemade cornbread.

Advice
During cooking, you can optionally remove the garlic, onion, and parsley sprigs from the soup. The flavor of the soup will be more pronounced if you use homemade goose meat. Strain the remaining soup through a sieve to get a clear soup base, which can be frozen or used to prepare some dishes.
