Homemade Marshmallows
Marshmallow, or mallow, is a plant from which a sticky and gelatinous liquid has been extracted for a long time, used as a remedy for sore throats. However, since the liquid itself has an unpleasant taste, it was mixed with sugar and water, causing the mixture to slightly puff up. This is how the well-known sugar puffs were created. Today, marshmallows are made from sugar, corn syrup, water, and gelatin.

240 ml Water

21 g Gelatin powder, unsweetened

400 g Sugar, white

240 ml Syrup, corn

0.25 teaspoons Salt, table

Line a baking dish measuring 33 x 23 x 5 cm with parchment paper. Sprinkle 3 tablespoons of powdered sugar over the paper. Pour 120 ml of cold water into a bowl and sprinkle gelatin over it. Mix the gelatin well in the water and let it sit for 15 minutes to bloom.

Place a saucepan on the stove and add sugar, corn syrup, salt, and 120 ml of cold water. Over medium heat, stir continuously until all ingredients melt into a liquid sugar mixture. Once the mixture boils, cover the saucepan and cook for another 3 minutes. Then uncover the saucepan and increase the heat. Cook on high heat for 10 minutes without stirring, then remove the saucepan from the heat.

Slowly pour the hot sugar syrup into the bowl with gelatin while mixing with an electric mixer. Once all the sugar syrup is incorporated, increase the mixer speed to the highest setting and mix vigorously for 10 minutes until the volume triples. Then add vanilla extract and mix for another 30 seconds.

Transfer the mixture from the bowl into the prepared baking dish using a spatula. Once the mixture is in the dish, try to smooth the top as much as possible. Sprinkle 3 tablespoons of powdered sugar evenly over the top and let it sit at room temperature for 12 hours.

Sprinkle some powdered sugar on the work surface and invert the set mixture from the baking dish onto it. Carefully remove the parchment paper and cut the mixture into 6 cm pieces with a knife. Roll each piece separately in powdered sugar and shape as desired. Arrange the prepared marshmallows on a large serving plate and serve.
