Homemade Mayonnaise
Mayonnaise is served with fish, fried food, and cold meats. It is also useful for preparing various savory salads, sandwiches, raw vegetable platters, etc. It can also simply be spread on bread.

Ingredients

2 piece Egg, egg yolk, fresh

2 pinch Salt, table

1 pinch Spices, pepper, black

2 spoons Vinegar, apple

200 ml Oil, plant, sunflower

Add the egg yolk to a bowl and whisk it with a little salt, a pinch of pepper, half of the vinegar, and optionally a bit of mustard, until the mixture thickens nicely. This takes about 1 minute.

While continuing to whisk, add the oil drop by drop. Once about 2 tablespoons of oil have been incorporated, the mixture should be very thick. Add the remaining oil in a thin stream or tablespoon by tablespoon, while continuously whisking. The mayonnaise is ready when it is completely thickened and firm enough to bind salads (such as potato or French salad) or to serve with cold dishes (chicken, fish, hard-boiled eggs) and sliced vegetables. Finally, mix in the remaining vinegar and season the mayonnaise to taste with salt and pepper.

Advice
The flavor of mayonnaise can be varied with different additions (cream, mustard, chopped herbs, grated horseradish, finely chopped onion). You can use lemon juice, vinegar, or wine. If the oil is added too quickly, the mayonnaise may curdle. This can be fixed by gradually mixing in a teaspoon of cold water.
