Homemade Pear Bread

Preheat the oven to 175 °C. Line a 22 x 10 cm baking pan with parchment paper and grease it with oil. Wash and dry the pears. Then peel them thinly with a peeler, cut them, remove the stems and cores, and dice them. Wash and dry the lemon, and grate the zest. Be careful to only grate the yellow part, not the white pith, which is bitter.

In a medium-sized bowl, sift the flour, baking powder, and salt, and mix well. In a smaller bowl, whisk together the oil, lemon zest, eggs, and honey with a hand whisk. Pour the liquid mixture into the dry ingredients and mix well to form a uniform batter. Finally, fold in the pears.

Pour the batter into the prepared baking pan and bake in the preheated oven for 1 hour and 15 (to 25) minutes. The bread should turn golden brown, and its surface should be covered with thin cracks. Check for doneness with a toothpick: insert a toothpick into the center of the bread and pull it out. If it comes out clean, without any batter residue, the bread is done.

Remove the pan from the oven. Transfer the bread from the pan to a wire rack and let it cool for 30 minutes. Remove the parchment paper, slice the bread, arrange it on a serving plate, and serve with tea, hot chocolate, or coffee.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
