Ingredients
Dough
-
225 g Wheat flour, white, multi-purpose
-
2 pinch Salt, table
-
5 dag Butter, unsalted
-
2 dag Lard
-
1.2 dl Water
Filling
-
5 dag Butter, unsalted
-
2 piece Leek
-
2 pod Garlic, fresh
-
25 dag Meat, pork, smoked bacon
-
4 pieces Egg, fresh
-
2 teaspoons Yogurt, plain, from whole milk
-
2 dl Milk, skimmed
-
10 dag Cheese, groats
-
2 pinch Salt, table
-
2 pinch Spices, pepper, black
-
2 spoons Spices, pehtran, crushed
Steps
-
In a large bowl, sift the flour, then add salt, lard, diced butter, and ice-cold water. Quickly knead the ingredients into a crumbly dough. Shape the dough into a ball, wrap it in foil, and refrigerate for at least 30 minutes.
-
Meanwhile, prepare the filling. Clean and wash both leeks, then slice them into approximately half-centimeter thick rings. Cut the bacon into smaller pieces. Peel and finely chop the garlic.
-
Place a small pot on the stove and heat the butter. Then add the leeks, garlic, and bacon. Simmer on low heat for about 15 minutes, then remove the pot from the heat. In a bowl, beat the eggs, add milk, yogurt, rosemary, and grated cheese. Mix all the ingredients well with a hand whisk and season with salt and pepper.
-
Preheat the oven to 190 degrees Celsius. Roll out the dough on a floured surface into a rectangle and line a larger rectangular ovenproof dish with it. Press the dough lightly with your fingers against the bottom and create an edge. Spread the stewed leeks and bacon over the dough. Pour the cheese mixture evenly over the leeks. Place the dish in the preheated oven for 45 minutes.
-
Once the pie is baked, cut it into smaller pieces, serve on plates, and enjoy.
