Sift the flour onto a work surface and make a well in the center. Crack the eggs into the well and mix them with the flour using a fork. When the mixture can no longer be handled with a fork, add water and start kneading with your hands. Knead the ingredients into a smooth and soft dough, shape it into a loaf, and let it rest for a while.

Lightly flour the work surface and roll out the dough as thinly as possible. Let the rolled-out dough dry on a cloth for about an hour. You can flip it over during drying to ensure both sides dry evenly.

Cut the dough into four pieces, stack them on top of each other, then roll them into a log. Use a sharp knife to cut the log into thin noodles. Separate them with your fingers to prevent sticking and let them sit for a while to dry a bit more.

Cook the prepared noodles in beef soup or salted water. If there are any leftovers, spread them out on a clean cloth, let them dry overnight, and then store them in an airtight bag or container.
