Homemade Spinach Noodles
You dont need a pasta machine to prepare these noodles, so dont look for excuses not to make them yourself at least once!

Ingredients

400 g Spinach, raw

500 g Wheat flour, white, multi-purpose

4 pieces Egg, fresh

0.5 teaspoons Salt, table
Steps

Clean the spinach leaves, wash them, and dry them thoroughly. Fold each spinach leaf in half and remove the stem. Discard the stems.

Bring about 1.5 liters of lightly salted water to a boil in a large pot. Add the spinach leaves to the boiling water and cook them just until they soften (about 2 minutes). Then drain them well and immediately plunge them into cold water to stop the cooking process. Place the leaves in a colander and let the excess water drain.

Spread flour on a clean work surface. Make a well in the center. Beat the eggs well in a small bowl. Pour the beaten eggs into the well and start mixing from the center with your fingertips, gradually incorporating the flour into the eggs.

Once all the flour is mixed with the eggs, squeeze the spinach well with your hands to remove any excess water. Then finely chop it. Add the chopped spinach and salt to the dough mixture. Knead everything well and add a little more flour if needed. Knead for about 10 minutes until you get a smooth and elastic dough, and bubbles start to form on the surface.

Shape the kneaded dough into a loaf, wrap it in plastic wrap, and let it rest for 30 minutes.

Unwrap the dough and quickly knead it on a lightly floured surface, then roll it out to about 3 mm thick. Let the dough dry slightly, but not so much that it becomes crumbly. Then cut the dough into strips of your desired thickness with a sharp knife. Arrange the noodles on a lightly floured work surface.

Cook the noodles in a large pot of boiling salted water for 1 to 2 minutes, or until they soften. Toss the cooked noodles with your favorite sauce, or serve them as a side dish with your chosen meal.

Advice
When cooking pasta, we follow the rule of using 1 liter of water for every 100 grams of pasta, and 10 to 12 grams of salt per liter of water.
