Homemade Tabasco
The rare Tabasco sauce is made from red elongated Tabasco chili peppers, which have a spicy flavor with a hint of green. For preparing the sauce, you can use any elongated red hot chili peppers.

Ingredients

400 g Chili peppers, red chili, fresh

400 ml Vinegar, distilled

2 teaspoons Salt, table

Wash the chili peppers, remove the stems, and finely chop them along with the seeds. Place them in a pot, add vinegar, and mix well. Place the pot on the stove and slowly heat the mixture. Add salt and cook at a moderate temperature for 5 minutes. Remove the pot from the heat and let the mixture cool slightly.

Pour the cooled mixture into a blender and blend into a smooth puree. Pour the chili puree into a jar, seal it, and store it in the refrigerator for 2 weeks.

After 2 weeks, take the jar out of the refrigerator and strain the puree through a fine sieve (you can also use cheesecloth) and dilute the liquid with vinegar if needed. Pour the prepared Tabasco into a clean bottle, seal it well, and store it.
