Ingredients

2 cups Flour, Wheat, bread flour

2 teaspoons Baking powder

1 teaspoon Cocoa, powdered, unsweetened

1 teaspoon Spices, cinnamon, ground

2 piece Egg, fresh

1 cup Sugar, white

0.5 cups Oil, vegetable oil, canola

0.75 cups Honey

1 cup Coffee, espresso

0.5 cups Raisins, golden

Preheat the oven to 190 °C. Pick through the raisins, wash them, and dry them. Place a little flour in a cup and coat the raisins in it. Sift the remaining flour, baking powder, and spices into a bowl and mix well. In another bowl, beat the eggs with a whisk or electric mixer until frothy. Add the sugar, oil, and finally the honey to the eggs. Slowly mix the dry mixture into the liquid mixture. While mixing, add enough coffee to form a smooth batter without lumps. The batter should be liquid and thick enough to fall in clumps from a spoon. Finally, mix in the floured raisins.

Pour the batter into a greased deep baking dish measuring 22 x 30 cm. Bake the cake in the preheated oven for 35 to 40 minutes. Check for doneness with a toothpick: insert the toothpick into the cake, and if it comes out clean, the cake is done.

Let the baked cake cool slightly in the baking dish, then cool completely on a rack. Once cooled, cut the cake into pieces, arrange them on a serving plate, and serve.

Advice
The honey cake will be light only if we do not overmix the dough. Mix it only until the ingredients are combined and we get a uniform dough. The cake can also be frozen.
