Ingredients

1 kg Honey

2 kg Rye flour

250 g Sugar, white

1 cup Butter, unsalted

2 piece Sugar, white

10 g Spices, cinnamon, ground

1 pinch Spices, ginger, ground

1 pinch Spices, nutmeg, ground

Steps

Place a small pot on the stove and heat honey, sugar, and vanilla sugar. Cool the honey mixture well and add ground cinnamon, ground cloves, ground ginger, pepper, and nutmeg. Sift rye flour into a bowl, add warm water, and the honey mixture. Knead into a smooth and firm dough, cover it, and let it rest for two hours.

Preheat the oven to 165°C. Roll out the dough on a floured surface and cut out cookies using cookie cutters. Grease a baking tray or line it with parchment paper and place the cookies on it. Place the tray in the preheated oven and bake for about 10–15 minutes. In a small pot, dissolve a tablespoon of honey in 1 dl of water, bring to a boil, and remove from heat. Take the baked honey cookies out of the oven and brush them with the hot honey water to give them a nice shine.

In a bowl, thoroughly mix powdered sugar, rum, and hot water to make a white glaze, which you can then fill into a piping bag. Decorate the cookies as desired and let them air dry until the glaze hardens. Serve them as a dessert at the end of the festive meal.
