Honey Cookies with Nuts and White Icing
If we had to choose a small pastry that must not be missing from the table during the holidays, it would definitely be these delicious homemade honey cookies. In an effort to offer you a truly great recipe, we turned to Katarina Kovše, a member of the Društvo kmečkih žena Vitanje, who has received the golden recognition three times in a row for her honey cookies with white icing at the Dobrote slovenskih kmetij, earning her the quality mark. As she says, its best to use chestnut honey for the dough, and the cookies are at their best after a few days when all the flavors develop.

Ingredients

70 dag Flour, Wheat, bread flour

20 dag Walnuts

20 dag Powdered sugar

4 pieces Egg, fresh

2 teaspoons Baking powder

6 spoon Honey

1 spoon Spices, cloves, ground

1 spoon Spices, cinnamon, ground

pieces Spices, mace, ground
White ice

2 piece Egg, egg white, fresh

40 dag Powdered sugar
Steps

Beat the eggs and sugar until frothy. Add the ground nuts, honey, and spices, and quickly mix everything together.

Start incorporating the flour into the mixture. Mix in one part of the flour with an electric mixer and a whisk, then add the rest while kneading the dough. Once all the flour is incorporated and you have a smooth and soft dough, wrap it in transparent food wrap and store it in the refrigerator for a few hours (preferably overnight).

Shape the rested dough into cookies. First, roll the dough into a thicker log and cut it into pieces, which you then shape into balls with your hands and place on a baking sheet. Gently press a half walnut onto each ball with your finger.

Alternatively, roll the dough to about a centimeter thick, then use various cookie cutters to cut out shapes and place them on the baking sheet. Bake the cookies in a preheated oven at 160-180 degrees Celsius for about 10 minutes.

Make a thick sugar icing by beating egg whites and powdered sugar with an electric mixer. Dip the freshly baked cookies (those without nuts) into the icing. Wait for the excess icing to drip off, then place the cookies on a baking sheet and let the icing harden completely.

Serve the prepared cookies on a plate or platter. If you plan to serve them a few days later, store them in an airtight container.
