Honey Gingerbread Men

Ingredients

275 g Flour, Wheat, bread flour

185 g Rye flour

1 dl Honey

1 dl Oil, plant, sunflower

0.6 dl Milk, whole milk

1 teaspoon Lemon zest, fresh

0.5 teaspoons Baking powder

1 pinch Salt, table

2 teaspoons Spices, cinnamon, ground

0.5 piece Egg, egg white, fresh

1 teaspoon Juice, lemon
Steps

Place a small pot on the stove with oil, milk, and honey. Heat while stirring until you get a smooth, liquid mixture. Pour the honey mixture into a larger bowl. Add all the remaining ingredients and knead the dough. Shape the dough into a ball and wrap it in foil. Store it in the refrigerator, where it should rest for at least 2 hours.

Preheat the oven to 170 °C. Line a baking tray with parchment paper. Roll out the dough on a lightly floured surface to 0.5 cm thickness and use a cookie cutter to shape the little men. Place the gingerbread men on the prepared baking tray and bake in the preheated oven for 15 to 20 minutes.

Let the baked gingerbread men cool on a wire rack. Prepare the sugar glaze: in a small bowl, mix sugar, egg white, and lemon juice. Decorate the cookies with the sugar glaze and wait for it to completely dry and harden. Transfer the gingerbread men to a serving plate and serve.
