Honey Squares

400 g Honey

130 ml Oil, vegetable oil, canola

250 g Sugar, white

3 pieces Egg, fresh

650 g Wheat flour, white, multi-purpose

1.5 teaspoons Baking powder

1 teaspoon Spices, cinnamon, ground

100 g Candied fruit

100 g Nuts, almonds

Place a saucepan with oil, sugar, and honey on the stove. Heat the mixture slowly over moderate heat while stirring continuously to create a liquid mixture. Once the mixture boils, remove the saucepan from the heat and let it cool.

Sift the flour into a large bowl and mix it with baking powder, almonds, and spices. Using a whisk, mix the eggs into the cooled honey mixture, then pour the mixture into the bowl with the dry ingredients. Mix all the ingredients well with a whisk, then transfer the dough to a clean work surface and knead thoroughly. If the dough seems too soft, add a little more flour; if it's too thick, add a bit of milk. Shape the dough into a ball, wrap it in transparent food wrap, and refrigerate for 2 hours.

Preheat the oven to 180 degrees Celsius, and line a baking tray with parchment paper (or grease it with oil). Spread the dough evenly across the entire baking tray using damp hands. Use a knife to score the dough into squares, approximately 5 x 5 cm in size. Decorate each square with a rose made from half a candied cherry and half a peeled almond (see picture). Bake the honey squares in the middle of the oven for 40 to 45 minutes, or until the top turns golden brown.

Let the baked squares cool in the tray, then cut them, arrange them on a serving plate, and serve.
