Honey Sticks from Pulled Dough

Ingredients

1 piece Lemon, fresh, without shell

300 g Flour, Wheat, bread flour

450 ml Water

2 pinch Salt, table

125 g Butter, unsalted

300 g Sugar, white

2 spoons Honey

pieces Oil, vegetable oil, canola
Steps

Cut the lemon in half and squeeze one half well. Sift the flour onto a clean work surface and make a well in the center. Add salt, lemon juice, and 150 ml of water. Knead the ingredients well and form into a ball. Let it rest for 10 minutes.

Roll out the dough and place the butter in the center. Cover it with the edges of the dough and form into a ball again. Knead the ball very well and roll it out again on a floured surface. Fold the edges of the dough over each other and place the dough in the refrigerator for at least 1 hour.

Roll out the dough again, making sure it is about half a centimeter thick. Cut it into very thin sticks (about 5 to 7 cm long) and place them in the refrigerator for 20 minutes to help them maintain their shape during frying. Place a pot on the stove and heat the oil well. Fry the sticks in the hot oil until they turn golden brown.

Place a new pot on the stove and bring 300 ml of water to a boil. Add sugar, honey, and a few drops of lemon juice. Mix well until the sugar and honey dissolve, then pour over the freshly fried sticks. Serve on plates and offer to your guests.

Advice
Fry in a large amount of fat. The food must float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle.
