Honey Syrup Doughnuts
We all know doughnuts well. Its common to add dried or candied fruit to the dough, but the Greeks pour a mixture of honey, sugar, lemon juice, and water over them. Its time to try the Greek version!

Ingredients

450 g Wheat flour, white, multi-purpose

25 g Yeast, dry

1 spoon Sugar, white

Thoroughly wash the lemon and dry it completely. Finely grate the zest, then cut the lemon in half and squeeze the juice from one half (use the other half for making lemonade). Sift the flour into a bowl and make a well in the center. Crumble the yeast into the well and mix it with sugar, lukewarm milk, and one tablespoon of flour. Sprinkle salt around the well. Cover the bowl with a clean kitchen towel and let the yeast rise in a warm place for 15 minutes.

In a smaller bowl, mix lukewarm water, egg, and lemon zest well with a hand whisk (or fork). Pour the mixture into the bowl with the flour. Combine all the ingredients into a smooth and pliable dough, kneading it with a spoon until bubbles start to form. Properly kneaded dough is elastic and does not stick to the sides of the bowl. Cover the bowl with the kneaded dough again and place it in a warm spot for about 60 minutes to let the dough rise.

Heat oil in a large pot to 180 ÂșC (if you don't have a thermometer, you can test the oil by dipping the handle of a wooden spoon into it. The oil is hot enough when bubbles form around the handle).

Take a large soup spoon and dip it into the hot oil for a few seconds. Then scoop the risen dough with the spoon and place it into the oil. The dough will easily slide off the oiled spoon. Fry the doughnuts gradually. When the doughnuts are golden brown on one side, flip them and fry the other side. Repeat the process until all the dough is used.

Remove the fried doughnuts from the oil with a slotted spoon and transfer them to a plate lined with kitchen towels. Let the excess oil drain. In a small pot, mix sugar, honey, water, and lemon juice. Heat the mixture over moderate heat while stirring until all the sugar dissolves. Then continue cooking and stirring for about 5 minutes until the syrup thickens slightly. When a spoon dipped into the pot is nicely coated with syrup, remove the pot from the heat.

Transfer the doughnuts to a larger plate and pour the hot honey syrup over them. Place half a walnut kernel on each doughnut. Serve the dessert warm or cold.

Advice
Its best to use organic lemons, as their peel is not treated with pesticides. If organic lemons are not available, soak the lemon in hot water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins. For frying, use fats that do not contain water, such as coconut oil or good quality oil.
