Hot Whey Pancakes

Ingredients

600 ml Whey, sour, liquid

15 g Yeast, dry

450 g Wheat flour, white, multi-purpose

1 pinch Salt, table

4 spoon Water

1 pinch Baking powder

1 piece Lemon, fresh, without shell

50 g Powdered sugar
Steps

Place a small pot on the stove and pour the whey into it. Heat it over moderate heat until it becomes lukewarm. Remove the pot from the heat, add the yeast, and stir until the yeast dissolves.

Sift the flour and salt into a large bowl, making a well in the center. Pour the whey with yeast into the well. Mix the dough well with a wooden spoon and cover it with a kitchen towel. Let it rise in a warm place for about one hour.

Mix warm water with baking soda and incorporate the mixture into the risen dough. Cover it again with the towel and let it rise for another hour.

Wash the lemon thoroughly and grate the lemon zest. Add the lemon zest to the risen dough and wait for 10 minutes. Heat a pan over low heat and add a little oil. Place some metal round baking molds in the pan.

Pour the batter into the molds and cook over low heat until cracks appear on the surface of the pancakes. Then carefully flip the pancakes with a spatula and cook for a few more minutes. Serve them on plates and sprinkle with powdered sugar. You can also offer jam as a side.
