Wash the meat and dry it with a paper towel. Gently lift the skin with your fingers and separate it from the meat. Transfer the chicken to a bowl. Thoroughly wash the chili, clean it, and roughly chop it. Peel the shallots, ginger, and garlic, and cut them into pieces.

Place the chili, shallots, garlic, and ginger into a food processor along with mustard, sugar, cinnamon, lime juice, a tablespoon of oil, and rum. Blend into a smooth, liquid paste. Season with salt and pepper to taste. Set aside half of the mixture for later. Use the remaining mixture to rub the chicken under the skin and on the skin. Cover the bowl with the chicken and place it in the refrigerator for about 4 to 6 hours.

Light the charcoal. Heat the grill and oil it well. Slowly cook the drumsticks over medium heat for 12–15 minutes on each side. Then let them sit over the embers for another 5 minutes. Once the drumsticks are cooked, serve them on plates and accompany them with the reserved chili sauce.
