Hummus
Hummus is a spread made from chickpeas with a very long history – in Egypt, chickpeas were cooked and eaten as early as 7000 years ago. Hummus in Arabic means chickpeas, so its clear where the name of this dish comes from.

250 g Chickpea, cooked

40 ml Juice, lemon

45 g Sesame butter, tahini

2 pod Garlic, fresh

4 spoon Oil, olive
Steps

Drain the chickpeas. Save the liquid. Peel the garlic and cut it into pieces. Wash the lemon, cut it in half, and squeeze out the juice.

Place the chickpeas, garlic, tahini, salt, and lemon juice in a food processor and quickly blend. While mixing, add the oil and enough of the saved liquid (about 1/4 cup) to make the spread smooth. Continue mixing for three to five minutes or until the mixture is uniform and smooth.

Serve in a serving dish. Offer pita bread and fresh vegetables cut into sticks on the side.

Advice
Tahini or sesame paste can also be made at home from sesame seeds and sesame oil. For one unit of oil, take four units of sesame seeds. Roast the sesame seeds in a Teflon pan for a few minutes – they are ready when the seeds start to pop. Let the roasted seeds cool slightly and grind them in a food processor. Continue mixing and gradually add the oil. Store the prepared tahini in a jar with a lid in the refrigerator. You can also mix in chopped parsley to enrich the flavor of the hummus.
