Hummus with Roasted Beets
A delicious vegetable spread that will delight all lovers of vegetables, healthy eating, and great flavors. It can be used as a spread for whole-grain bread and crackers, and of course, you can also dip sliced vegetables and crudités into it.

Ingredients

250 g Peach, fresh

3 cups Chickpea, cooked

2 pod Garlic, fresh

90 ml Sesame butter, tahini

1 teaspoon Salt, table

2 pinch Spices, pepper, black

1 teaspoon Spices, cumin, seeds

pieces Juice, lemon

pieces Oil, olive

pieces Yogurt, plain, from whole milk

Preheat the oven to 200 degrees Celsius. Prepare a large piece of food foil. Clean the beetroots, wash them, and place them in the center of the foil. Sprinkle the beets with salt and a little water, then fold the foil tightly on all sides to form a pouch. Carefully place the pouch on a baking tray and bake in the preheated oven for about 60 minutes. After one hour of baking, check if the beets are done by inserting a thin knife. If the knife slides in easily, remove the tray from the oven. If not, continue baking and check every 15 minutes.

Once the beets are baked, remove the tray from the oven and open the pouch. Let the beets cool until they can be handled, then peel and cut them into larger pieces. Place the pieces in a food processor (blender). Add the chickpeas, peeled garlic cloves, tahini, salt, pepper, cumin, lemon juice, and olive oil. Blend the ingredients until you get a completely smooth and spreadable mixture. If needed, add a little water or the liquid from cooking the chickpeas.

Taste the beet hummus and adjust the seasoning if desired. Once satisfied with the flavor, transfer it to a serving bowl, drizzle with olive oil, and chill well in the refrigerator. Before serving, garnish the chilled hummus with yogurt, coarsely chopped hazelnuts, and/or parsley, and serve with bread, grissini, or crackers.
