Hummus with Roasted Cauliflower
An excellent vegetable snack, suitable for celebrations, picnics, and parties. If you avoid eating bread, you can enjoy this dish by dipping pieces of roasted cauliflower into the hummus, otherwise, you can use pita bread or crackers.

Ingredients

Preheat the oven to 200 degrees Celsius. Clean the cauliflower, wash it, and break it into bite-sized pieces, then dry them with paper towels.

Place the cauliflower pieces in a large bowl, season them with salt and freshly ground pepper, and drizzle with olive oil. Gently mix them with your hands to ensure even seasoning, then arrange them in a single layer on a baking tray lined with baking paper. Roast in the preheated oven for 20 to 25 minutes (until the pieces are nicely browned and caramelized on the top and edges). Let the roasted cauliflower cool slightly.

Meanwhile, prepare the hummus. Drain the chickpeas from the can well, then place them in the bowl of a food processor. Add peeled and crushed garlic, lemon juice, olive oil, and tahini. Quickly blend the ingredients, then while mixing, add enough water to achieve a smooth and creamy consistency. Season the hummus with salt and pepper to taste, and add more lemon juice if needed.

Transfer the prepared hummus to a serving dish (you can also use several smaller dishes). Make a well in the center with a spoon and fill it with the roasted cauliflower. Add pine nuts and chopped parsley, then drizzle everything with a little olive oil. Serve the dish.
