Hunters Roast

3 dl Alcohol, Wine, Red

2 piece Tomato, red

2 piece Sweet potato, unpeeled, fresh

Thoroughly wash the rabbits under running water and then dry them well with a paper towel. Place them in a large enough bowl. Wash the carrots, peel them, and slice them into rounds. Peel, wash, and chop the onion and garlic. In a small bowl, prepare the marinade from the listed ingredients. Heat the marinade and pour it hot over the rabbits. Let the rabbits marinate for at least 1 day.

Wash, clean, and cut the tomatoes and cucumbers into smaller pieces. Wash the broccoli, separate it into individual florets, and trim off any excess stems. Prepare the baking dish and preheat the oven to 180 °C.

Place the rabbits in a greased baking dish and put the dish in the preheated oven. Roast the rabbits for a good hour and a half. Halfway through roasting, pour the remaining marinade over them, and during roasting, baste them several times with red wine. While roasting, boil some water and add the broccoli, cooking it for about 10 minutes. Drain the cooked broccoli.

Take the roasted rabbits out of the oven, carve them, and arrange them on plates. Serve with fresh tomatoes and cucumbers on the side, and place the broccoli on the chosen side dish.
