Imperial Pancake (Schmarren)
There are many stories about the origin of this well-known dish. The most famous one claims that the royal chef accidentally ruined a pancake he was preparing for Emperor Franz Joseph I. Because of this, he added a handful of raisins, broke it into pieces, sprinkled it with powdered sugar, and served it as a new dish.

Ingredients

4 pieces Egg, fresh

500 ml Milk, skimmed

1 bag Sugar, white

60 g Sugar, white

2 pinch Salt, table

220 g Wheat flour, white, multi-purpose

30 g Butter, unsalted

1 handful Raisins

1 dl Alcohol, Rum

2 spoons Powdered sugar

Separate the egg whites from the yolks into two bowls. In the bowl with the yolks, add milk, vanilla sugar, half of the regular sugar, and salt. Mix well with a whisk until the ingredients are combined. Then, gradually add the flour while mixing until a smooth batter without lumps forms.

Beat the egg whites with an electric mixer until foamy. Gradually add the remaining sugar and beat until stiff and glossy peaks form. Gently fold the egg whites into the yolk mixture using a spatula.

Place a pan on the stove and melt the butter in it. Pour enough batter into the pan to make the Imperial Pancake about 1 centimeter thick. Sprinkle soaked raisins on top.

Cook the pancake over low heat. When the bottom turns golden brown, use a blunt spatula to divide it into quarters and carefully flip each piece. Wait until the quarters are browned on the other side, then use the spatula to cut or tear them into smaller pieces. Gently turn the pieces without pressing or mashing them. Cook until the pieces are golden brown on all sides.

Serve the prepared Imperial Pancake on plates and sprinkle with powdered sugar. Serve the dessert while it is still warm. Offer compote, marmalade, or cherries on the side.
