Irish Beef Stew (Irish Beef Ragu)
A classic Irish dish, perfect for colder days and occasions when a larger number of people gather around the table. The stew is served with bread, and as a side dish, you can also serve bread dumplings or polenta.

1 kg Meat, beef, side

2 piece Onion, raw

3 pieces Carrot, fresh

4 dl Alcohol, Beer

4 dl Soup base, beef, cube

3 pods Garlic, fresh

2 spoons Tomato, concentrate

2 piece Spices, bay (leaves)

1 spoon Worcestershire sauce

1 teaspoon Spices, thyme, dried

800 g Potatoes, white

Steps

Cut the beef into larger pieces (similar to goulash). Peel the carrots, wash them, and cut them into pieces or rings. Peel the garlic and onion, and finely chop them separately.

Place a thick-bottomed pot on the stove and heat the oil. Add half of the meat, season it with salt and freshly ground pepper, and brown it on the bottom side. Then turn the pieces of meat and brown them on the other side.

Remove the browned meat from the pot and keep it warm on a plate. Brown the remaining meat in the pot, seasoning it with pepper and salt as well.

Add another tablespoon of oil to the pot if needed, then add the carrots and onion. Sauté the vegetables for 5 minutes, stirring occasionally.

Pour beer over the sautéed vegetables. Use a spatula to scrape the bottom of the pot well to release all the caramelized bits that formed during sautéing, then return the browned meat along with its juices to the pot. Add beef broth and water, and include the bay leaf, garlic, thyme, Worcestershire sauce, and tomato paste. Stir and bring to a boil, then reduce the heat to a minimum and cover the pot. Let the stew simmer slowly for 60 minutes, stirring occasionally.

Peel and clean the potatoes. Wash them thoroughly and cut them into pieces, then add them to the pot along with about 2 teaspoons of salt. Let the stew simmer uncovered for about 40 minutes. It is ready when the meat and vegetables are tender.

Serve the stew in deep bowls or plates. Offer bread or another side dish of your choice alongside.
