Irish Potato Pancakes
Boxty are very popular Irish potato pancakes made from a mixture of mashed and grated potatoes. Traditionally, they are eaten for breakfast on St. Patricks Day, celebrated on March 17th. Potato pancakes can also be enjoyed for lunch, dinner, or as a snack. Topped with sour cream and fried bacon, they are even more delicious!

Ingredients

900 g Potatoes, white

180 ml Milk, whole milk

1 piece Egg, fresh

40 g Wheat flour, white, multi-purpose

pieces Salt, table

2 spoons Butter, unsalted

pieces Meat, pork, smoked bacon
Steps

Peel, wash, and cut half of the potatoes into larger pieces, then boil them in salted water. The potatoes are cooked when a thin knife can easily pierce them.

Peel, wash, and coarsely grate the remaining potatoes. Sprinkle them with 1/4 teaspoon of salt, mix well, and place them in a fine-mesh sieve set over a bowl.

Once the potatoes are cooked, drain them well. Mash them with 60 ml of milk until smooth. Squeeze the grated potatoes with your hands to remove as much excess liquid as possible.

In a large bowl, add the egg, remaining milk, flour, salt, and pepper. Mix the ingredients well with a hand whisk or mixer until smooth, then fold in the grated potatoes and mashed potatoes.

Heat a frying pan over medium heat. Add a small piece of butter (just enough to grease the pan) and wait for it to melt. Place a spoonful of the potato mixture onto the hot butter and flatten it slightly with the back of the spoon to form a small pancake, about 0.5 cm thick. If the pan is large enough, you can cook 2 to 4 pancakes at the same time. Once they are nicely browned on the bottom (after about 4 to 5 minutes), carefully flip them with a spatula and cook for another 4 to 5 minutes on the other side. Repeat the process until all the potato mixture is used.

Serve the cooked pancakes on plates. Optionally, top them with sour cream and fried bacon, and serve while still warm.
