Istrian Stuffed Squid
Another typical Slovenian dish. This time we ventured into Slovenian Istria and brought back a recipe for stuffed squid from the local cuisine. Try it out and youll discover that garlic, breadcrumbs, and parsley with their vibrant flavors make an excellent combination. And undoubtedly, youll feel like youre by the sea.

Ingredients

1 kg Shellfish, abalone

5 pods Garlic, fresh

1 bouquet Parsley, fresh

1 twig Spices, ginger, ground

120 g Breadcrumbs, dried

2 pinch Salt, table

0.5 dl Oil, olive

0.5 dl Alcohol, Wine, White

Steps

Clean the squid thoroughly, wash them well, and dry them with a kitchen towel. Peel the garlic and chop it finely. Thoroughly wash the parsley and thyme, strip the thyme leaves and chop them finely along with the parsley.

Finely chop the tentacles and mix them in a bowl with the garlic, parsley, and breadcrumbs, then season with salt to taste. Stuff the squid with the prepared filling and secure them with toothpicks. Place a frying pan on the stove and heat the oil.

Sear the stuffed squid over moderate heat for about 5 minutes on each side, then add a little white wine and cover the pan. Simmer the squid for about 15 minutes until they become tender. Then serve them on plates, drizzle with the sauce from the pan, and garnish with fresh thyme leaves. Serve with a glass of semi-sweet white wine on the side.
