Italian Biscotti with Dried Fruit and Nuts
Biscotti are very popular cookies in Italy. To the basic dough, we can add various additions such as dried and candied fruit, nuts, and chocolate chips. The dough is then shaped into a loaf or rolls, baked, sliced, and baked again. The result is crispy and very durable cookies that are served with a cup of warm beverage, into which they are dipped.

350 g Wheat flour, white, multi-purpose

2 teaspoons Baking powder

1 teaspoon Orange, shell

2 teaspoons Spices, cinnamon, ground

180 g Sugar, white

3 pieces Egg, fresh

90 g Candied fruit

50 g Nuts, almonds

Steps

Preheat the oven to 180 degrees Celsius. Line two low baking sheets with parchment paper. In a bowl, mix the flour, baking powder, grated orange zest, spices, and sugar. In a small bowl, beat the eggs with a fork and add them to the bowl with the dry ingredients. Mix well with a spoon until the eggs and dry ingredients come together to form a rough dough.

Turn the dough out onto a clean work surface and knead it well with clean hands. Initially, the dough will be very dry and crumbly, but it will gradually become more uniform and smooth. Once the dough comes together, add the raisins, almonds, pistachios, and candied orange peel. Knead until the nuts and fruit are evenly distributed throughout the dough, then divide the dough into four parts.

Shape each part into a log about 30 cm long on a lightly moistened work surface with moistened hands. Place two logs on each prepared baking sheet, making sure there is enough space between them as they will spread slightly during baking. Bake the logs in the preheated oven for 25 to 30 minutes.

Let the baked logs cool on the baking sheet for about 10 minutes. Reduce the oven temperature to 140 degrees Celsius. Slice the logs diagonally with a serrated knife into approximately 1 cm thick slices. Arrange the slices on the baking sheet and bake in the preheated oven for 15 minutes. After 15 minutes, flip the cookies and bake the other side for another 10 to 15 minutes.
