Italian Grape Cake
Whether its a Sunday lunch or an afternoon coffee - a juicy and light cake with grapes is always a good choice. Especially in autumn, when the season of fresh, homegrown grapes is at its peak.

Ingredients

225 g Wheat flour, white, multi-purpose

Steps

Pour the wine into a small pot and place it on the stove. Bring the wine to a boil and let it simmer gently for 5 to 10 minutes, or until only 85 ml of wine remains in the pot. Let the hot wine cool.

Preheat the oven to 180 degrees Celsius. Grease a round baking pan (24 cm in diameter) with olive oil and dust it with flour (remove any excess flour). Wash the grapes and cut them in half. Remove the seeds from the halves.

In a bowl, using an electric mixer, cream the softened butter and sugar until smooth. Gradually, one by one, mix in the eggs. Once all the eggs are incorporated, add the lemon and orange zest to the mixture.

Mix the cooled wine with olive oil. Sift the flour and baking powder into the bowl and mix both ingredients well. On low speed, alternately mix the flour and the oil-wine mixture into the egg-butter mixture (a little liquid, 1/3 of the flour, a little liquid, 1/3 of the flour, a little liquid, and 1/3 of the flour). Once all the ingredients are incorporated and you have a smooth batter without lumps, stop mixing.

Pour the batter into the prepared baking pan and spread it evenly, smoothing the top. Arrange the grape halves on top of the batter and sprinkle with a little sugar. Bake the cake in the preheated oven for 35 to 40 minutes, or until a skewer inserted into the center of the cake comes out clean.

The cake can be served while still warm or allowed to cool completely before serving. Serve it with whipped cream or a scoop of vanilla ice cream.

Advice
It is best to use organic citrus fruits, the peel of which is not treated with pesticides. If organic citrus fruits are not available, immerse the fruits in boiling water for a few minutes, then wipe them well to remove the wax, which contains toxins.
