Italian Meatloaf
You can add any desired extras to the meat mixture, such as seasonal vegetables (carrots, bell peppers, celery) or herbs (basil, thyme, oregano, rosemary). Adding some pieces of mozzarella wont hurt either. Just keep in mind that this is an Italian meatloaf, so its better not to overdo it with any special ingredients.

Ingredients

600 g Meat, beef, ground

100 g Meat, pork, smoked bacon

1 piece Onion, raw

2 pod Garlic, fresh

1 piece Egg, fresh

50 g Breadcrumbs, dried

4 spoon Cheese, Parmesan, grated

1 spoon Tomato, concentrate

2 pinch Salt, table

1 pinch Spices, pepper, black

Preheat the oven to 190 degrees Celsius. Line a deep rectangular baking dish with parchment paper. Peel the onion and garlic, then finely chop them. Cut the pancetta into small pieces.

In a large bowl, mix the grated Parmesan and breadcrumbs. Then add the ground meat, pancetta, chopped onion and garlic, beaten egg, tomato paste, salt, and pepper to the bowl. Use your hands to knead all the ingredients together until you get a uniform mixture.

Shape the mixture into an oblong loaf with your hands and place it in the prepared baking dish. Bake the meatloaf in the preheated oven for 40 minutes. Then increase the oven temperature to 220 degrees Celsius and bake the loaf for another 10 to 15 minutes, until it is nicely browned on top.

Remove the baked meatloaf from the oven and let it rest for 5 minutes before slicing. Serve the meatloaf with your chosen side dish.

Advice
You can also lightly sauté the onion and pancetta before mixing them with the ground meat.
